Unplug the the power cord from the back of the ps3, then hold down the eject button while plugging it back in. The fan will go full blast for a few seconds and if there's a disc inside, it will eject. Keep holding eject until it shuts back off. You may need to unplug and plug the power cable back in again afterwards to get it to start up again.
Yes, it can - the first thing I did when I got my super-slim was pop in my PS1 copy of Doom. As far as I know the PS3 emulates the PS1 with software, so all models are compatible with PS1 games. I don't have my PS3 to hand but there's an option to smooth the output as well.
